Ph.D fellow within Food and health – natural functional components and minimal processing

Department of Food Science wishes to appoint a Ph.D fellow in natural functional components and minimal processing (“Enzymes for the in situ generation of functional components”) for a period of 3 years from 1st December 2010 or as soon as possible thereafter.

The project is part of the research project Food and health – natural functional components and minimal processing available at the University of Copenhagen, Faculty of Life Science, and the scholarship will be associated with the Danish Food Research School (FOOD Denmark).

Project description

Functional components resulting from the modification of food compounds by various minimal processing techniques and/or enzymes provide better nutritional value of the products due to the mild conditions of treatment, which can be observed as improved texture of the food, increased flavour release, and enhanced bioavailability of antioxidants and vitamins. Taking advantage of proteins as the structural units for generation and/or preservation of functional components make excellent vehicles for encapsulating bioactive ingredients in colloidal systems by minimal processing techniques. Intrinsic structure and viscoelastic properties of these complex systems can be tuned by processing conditions, pH, temperature and molecular composition.

This PhD project aims at characterizing the properties of high pressure treated casein micelles as structural carriers of functional components and the interactions with selected bioactive ingredients, food hydrocolloids and enzymes by the use of spectroscopic and rheological techniques. The study will involve laboratory work and the successful candidate should have qualifications within dynamic light scattering techniques, confocal microscopy, differential scanning calorimetry (DSC), as well as experience within food chemistry and physical chemistry.

Formal requirements

The position is available for a 3-year period for applicants holding a relevant master´s degree or for a 4-year period for applicants who are already enrolled or are accepted to be enrolled at one of the Faculty´s master´s programmes.

At the time of commencement, applicants for the 4-year period must have approximately one year of study remaining before graduating from their MSc programme.

The successful applicant of the PhD scholarship must pass an enrolment in the LIFE Graduate School before the Faculty can finish the letter of employment.

Terms of employment

The position will be filled according to the agreement between the Danish Ministry of Finance and the Danish Confederation of Professional Associations. The post is covered by the Protocol on Job Structure.
